Nothing published here is nutritional counseling, medical advice or a health recommendation of any sort. Our preference for butter over refined seed oils is a culinary tradition and a matter of taste, not a clinical claim. Your Kitchen Is Not Our Kitchen
Ovens run hot and cold, pots conduct differently, ingredients vary by season and by shop. The times, temperatures and yields we publish reflect the kitchen in which each recipe was tested, and your results may honestly differ. Use your judgment, especially where undercooked meat, fish or eggs would pose a risk, and rely on an accurate food thermometer rather than on timing alone.
Allergens and Intolerances
Flemish cooking leans heavily on butter, cream, eggs, wheat flour and fish, and several recipes here contain gluten, dairy or other common allergens. Ingredient lists describe what the dish traditionally contains; they are not allergy labeling. Always check the packaging of what you actually buy, and adapt or skip any recipe that conflicts with an allergy or intolerance in your household.
A Note on Cooking With Beer
Several traditional dishes on this Site are braised or simmered with Belgian ale. Alcohol reduces during long cooking but may not disappear entirely. Whether a dish cooked with beer is appropriate for children, for pregnancy or for anyone avoiding alcohol is a decision for you and, where relevant, your physician. Substituting stock for the ale will change the flavor but will always work in the method.
